Ingredients
  

  • Chicken: 4 boneless skinless chicken breasts
  • Mushrooms: 1 cup sliced
  • Cream Cheese: 8 ounces
  • Broth: 1 cup chicken or vegetable broth
  • Mozzarella: 1 cup shredded
  • Parsley: 1/4 cup freshly chopped
  • Onion: 1 large finely chopped

Instructions
 

Sauté the Onions

  • Start by heating a pan over medium heat and adding a splash of olive oil. Add the chopped onions and sauté them until they turn translucent. This step is important for building the flavor base of your chicken cream cheese recipe.

Sauté the Chicken

  • Season your chicken breasts with salt and pepper. In the same pan, sear them until golden brown on both sides.

Add the Mushrooms (Optional, you can skip if you don't like mushrooms)

  • Remove the chicken and sauté the mushrooms in the pan. Cook them until they're soft and fragrant. I love mushrooms, they give a unique taste to the recipe, but if you don't like mushrooms you can skip this step.

Stir in the Cream Cheese

  • Return the chicken to the pan and lower the heat. Add the cream cheese, stirring until it melts into a luscious sauce that envelops every piece of chicken.

Pour in the Broth

  • Add the broth to the pan and let everything simmer for about 15 minutes.

Top with Mozzarella

  • Sprinkle mozzarella over the top and bake in a preheated oven at 375°F (190°C) for about 20 minutes or until the cheese is melted and bubbly.

Garnish with Parsley

  • Before serving, sprinkle freshly chopped parsley for a pop of color and freshness.
