Ingredients
  

  • 4 chicken breasts or thighs bone-in or boneless, your choice
  • 1 cup of smooth peanut butter
  • 1 can of coconut milk or 1 cup of heavy cream for extra richness
  • 3 tablespoons of soy sauce
  • 1 tablespoon of honey or brown sugar optional for sweetness
  • 1 teaspoon of fresh ginger grated
  • 2 cloves of garlic minced
  • 1 tablespoon of lime juice
  • 1 teaspoon of chili flakes optional for a kick
  • 2 tablespoons of oil vegetable or coconut
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • Prepare Your Ingredients
  • Start by seasoning your chicken with salt and pepper on both sides. Chop your garlic and ginger and have all your ingredients ready to go.
  • Sear the Chicken
  • Add oil to a large skillet over medium heat. Sear the chicken pieces for about 4-5 minutes on each side, until they’re golden brown. Remove the chicken and set it aside. Don’t worry if it’s not fully cooked it’ll finish cooking in the sauce.
  • Make the Peanut Butter Sauce
  • In the same skillet, sauté the garlic and ginger until fragrant (about 1-2 minutes). Add the peanut butter, coconut milk, soy sauce, honey, lime juice, and chili flakes. Stir until the sauce becomes smooth and creamy.
  • Combine and Simmer
  • Return the chicken to the skillet, nestling it into the sauce. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.
  • Garnish and Serve
