- 4 boneless skinless chicken breasts
- 1 cup sour cream
- 1 can cream of chicken soup 10.5 oz
- 1 cup white or brown rice uncooked
- 1 cup chicken broth
- Salt and pepper to taste
- Optional: Garnish with fresh parsley.
Mix the Base
In a bowl, mix together the uncooked rice, cream of chicken soup, sour cream, and chicken broth until well combined. Spread this mixture evenly across the bottom of your baking dish.
Bake and Forget
Cover the dish tightly with aluminum foil and bake for 1 hour. After an hour, remove the foil and bake for an additional 20-25 minutes, or until the chicken is cooked through and the rice is tender. The top should have a slight golden brown color when it’s ready.
