Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup sour cream
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup white or brown rice uncooked
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Optional: Garnish with fresh parsley.

Instructions
 

Prepare your baking dish

  • Preheat your oven to 350°F (175°C). Grab a baking dish and spray it lightly with non-stick cooking spray. This will make cleanup a breeze!

Mix the Base

  • In a bowl, mix together the uncooked rice, cream of chicken soup, sour cream, and chicken broth until well combined. Spread this mixture evenly across the bottom of your baking dish.

Season your Chicken

  • Season both sides of the chicken breasts with salt and pepper. Arrange the chicken on top of the rice mixture in the baking dish. Make sure the chicken is nestled into the base but still visible.

Bake and Forget

  • Cover the dish tightly with aluminum foil and bake for 1 hour. After an hour, remove the foil and bake for an additional 20-25 minutes, or until the chicken is cooked through and the rice is tender. The top should have a slight golden brown color when it’s ready.

Serve and Enjoy

  • Once out of the oven, give the dish a few minutes to cool. Sprinkle chopped parsley on top if desired, and serve hot. Your forgotten chicken recipe is ready to impress !
