Ingredients
  

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 garlic cloves minced
  • 1 bell pepper diced (any color)
  • 1 can 14 oz diced tomatoes
  • 1 can 14 oz tomato sauce
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz kidney beans, drained and rinsed
  • 3 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 cup chicken broth
  • 1 teaspoon salt adjust to taste

Instructions
 

Step 1: Cook the ground chicken

  • Heat the olive oil in a large pot over medium heat. Add the ground chicken, breaking it apart with a spoon as it cooks. Stir until it’s no longer pink about 5-7 minutes. Transfer to a bowl and set aside.

Step 2: Sauté the veggies

  • Using the same pot, toss in the diced onion, garlic, and bell pepper. Cook for about 3-4 minutes until softened and fragrant.

Step 3: Spice it up!

  • Add the chili powder, smoked paprika, and cumin to the vegetables. Stir everything together for 1-2 minutes to toast the spices and release their deep flavors.

Step 4: Add the base

  • Next, pour in the diced tomatoes, tomato sauce, and chicken broth. Stir well to combine all the ingredients, scraping up any bits stuck to the bottom of the pot.

Step 5: Stir in beans and chicken

  • Return your cooked ground chicken to the pot and add the black beans and kidney beans. Stir everything together and bring to a gentle simmer. Cover and cook for 20 minutes, allowing all the flavors to meld beautifully.

Step 6: Adjust and serve

  • Taste your chili and adjust the seasoning with salt or additional spices if needed. Ladle into bowls and top with your favorite toppings.
